French Toast Roll Ups

These are sweet and indulgent and not for the faint hearted. The mixture of sugar and cinnamon on the outside with the jam on the inside makes me think of a hot jam doughnut and nobody can hate on those. My only qualm with this is I always have a lot of crusts leftover but I end up freezing them and turning them into bread crumbs.

INGREDIENTS

8 slices of white bread, crust trimmed
2 eggs
2 tbsp milk
2 tbsp olive oil
1 tbsp butter
1/3 cup strawberry jam
Cinnamon
Caster sugar

METHOD

Combine eggs and milk in a shallow bowl.

Flatten each slice of bread with a rolling pin. Place a slice of bread in front of you and spread out 2 teaspoons of strawberry  jam on the third of the bread nearest to you.
Roll up the bread and lay it on a plate with the seam side down. Repeat until you’ve filled all the slices of bread.

Roll a roll up in the egg mixture, ensuring it is well coated all the way around. Repeat for all roll ups.

Heat butter and olive oil in a pan over medium heat. Place all eight roll ups in the frying pan and cook on each side till golden brown.

Whilst the roll ups are cooking, mix caster sugar and cinnamon on separate plate.

Remove roll ups from the frying pan and place straight into the sugar cinnamon mix. Coat the roll ups and shake off any excess.

Serve warm with mascarpone or whipped cream.
