Peanut Butter Granola

I never liked the movie Joe Black but there’s a scene where Brad Pitt’s character eats a spoonful of peanut butter for the first time and thinks it’s the most amazing thing. That’s how I feel about peanut butter, especially the crunchy variety. So I came up with this flavour of granola because not only does it make for a great breakfast but I was thinking of gifts I could give away at Christmas time and I always think you can’t go wrong with homemade edible gifts. You can make a large batch of this granola easily and it always looks good in a jar or packaged in little gift bags with a ribbon around it. If you’re like me, you’ll just find yourself nibbling away as you package them up – it’s probably best to make extra for snacking or breakfast!

INGREDIENTS

3/4 cup crunchy peanut butter
1/4 cup coconut oil
1/2 cup honey
4 cups rolled oats
2/3 cup almonds
1/2 cup sunflower seeds
1/4 cup shredded coconut

METHOD

Preheat oven to 175 degrees celsius (conventional oven)

Add all the dry ingredients together in a bowl.

In a small saucepan, add the peanut butter, coconut oil and honey. Mix everything together and heat over low heat till everything becomes liquid.

Pour the wet ingredients over the dry ingredients and mix till everything is coated in the sticky peanut butter liquid.

Spread the mixture out onto a baking tray and bake in the oven for 25 minutes or till golden brown. Remember to stir the granola every 10 minutes to ensure even browning.

Remove the tray from the oven and allow the granola to cool on the tray before packing away into an airtight container.
